Ingredients
- 1 lb chicken, cubed
- 1 C fresh basil
- 1 clove garlic
- ½ C pine nuts
- ½ C extra virgin olive oil
- ½ C shredded Parmesan cheese
Directions
- Cook chicken in saute pan over medium-high heat until cooked through
- While chicken is cooking, add basil, garlic, and pine nuts to food processor, pulse to chop
- Turn on food processor and let it run while pouring the olive oil into the processor until you have a smooth sauce
- Once chicken is cooked, pour pesto sauce over the chicken and toss
- Heat over low heat 2-3 minutes to warm the sauce
- Top with shredded Parmesan cheese
