Parmesan Pesto Chicken

  • 1 lb chicken, cubed
  • 1 C fresh basil
  • 1 clove garlic
  • ½ C pine nuts
  • ½ C extra virgin olive oil
  • ½ C shredded Parmesan cheese
  • Cook chicken in saute pan over medium-high heat until cooked through
  • While chicken is cooking, add basil, garlic, and pine nuts to food processor, pulse to chop
  • Turn on food processor and let it run while pouring the olive oil into the processor until you have a smooth sauce
  • Once chicken is cooked, pour pesto sauce over the chicken and toss
  • Heat over low heat 2-3 minutes to warm the sauce
  • Top with shredded Parmesan cheese
