Ingredients
- 4T butter
- 3 cloves garlic, minced
- 1 bell pepper, cut into strips
- 2T grated Parmesan cheese
- 1lb shrimp
Directions
- Melt butter in medium pan over medium heat
- Sauté garlic in butter until golden brown, about 2-3 minutes
- Add sliced bell pepper and sauté 5-8 minutes or until soft
- Add Parmesan cheese and shrimp and toss to coat. Cook over medium heat 2 minutes
Serve over spaghetti quash or zoodles and top with additional Parmesan cheese if desired
