Ingredients
- 1 onion, quartered
- Aluminum foil
- Whole raw chicken, rinsed and patted dry
- Your favorite spice mix – I use a combination of equal parts seasoned salt and adobo seasoning
Directions
- Place quartered onion on bottom of crock-pot
- Ball up 4 pieces of aluminum foil and place on bottom of crock-pot to act as a tray for the chicken
- Rub your favorite spice mix all over chicken
- Set chicken on top of onions and foil so it is raised up about an inch off the bottom of the crock-pot. This will let the drippings fall to the bottom of the crock-pot while the chicken roasts.
- Cook on low for 6-8 hours
- When done, transfer to a baking sheet and broil for 2-3 minutes to crisp up the skin
Serve with roast chicken gravy, if desired
