Cheesy Meatloaf

Meatloaf Ingredients
  • 1 egg
  • 3/4 C heavy cream  
  • 1 tsp salt    
  • 1 lb ground beef
  • 1 C shredded cheddar cheese    
  • 1/2 C diced Onion    
  • 1 tsp mustard    
  • 1/4 C sugar free ketchup
  • 1/2 tsp ground pepper or to taste    
  Topping Ingredients    
  • 2/3 C sugar free ketchup    
  • 1/2 C brown sugar substitute (I use Sukrin Gold)
  • 1½ tsp mustard    
  • salt & pepper to taste
Directions
  •  Preheat oven to 350
  • In a large bowl add meatloaf ingredients: egg, milk, salt, ground beef, shredded cheddar, diced onions, mustard, ketchup, salt, ground pepper
  • Mix well
  • Shape into 8 mini loaves and place in a 9×13 baking dish
  • In a small bowl combine topping ingredients: ketchup, Brown Sugar, mustard, salt and pepper
  • Spoon topping over loaves
  • Bake uncovered for 45 minutes

Serves: 8
