Ingredients
- 1 C almond butter (make sure there is no sugar added and only almonds and salt are the only ingredients listed on the label)
- ½ C sugar substitute (I use half Swerve, half Truvia)
- 1 egg
Directions
- Preheat oven to 350
- Mix all ingredients until combined well
- Scoop into 12 cookies and place on parchment paper covered cookie sheet
- Smash each cookie down a bit with a fork. The thinner you smash them, the crunchier they will be. Thicker will be chewier.
- Bake at 350 for 12-15 minutes or until lightly browned

Does the Truvia have to be the baking one or can it be the regular Truvia that comes in packets?

The regular Truvia. You can get it in packets or a plastic jar-like container. The baking blend is actually made with part Truvia and part real sugar, so you don’t want to use that!

Nope. Whatever your favorite sugar substitute is. I personally use half swerve, half Truvia but that’s just a personal preference.

You don’t! They won’t be very sweet if you skip it though since you should be using unsweetened almond butter. But they would’t be bad! And if you don’t care for them without the sweetener, you can absolutely decrease it so you’re not using as much but still have some sweetness.
